Eggs Mexicana
I know, I know. It’s been a while since my last stay at home, easy, peasy recipes hasn’t it. I can almost hear the sound of drumming fingers. You must all be wasting away I reckon if you’ve been waiting for my next spectacular creation. Well wait no longer folks. Another spectacular creation is here. And, as always, it is simple. Not only that, economical as well. It is a breakfast nibble really. Or a brunch. But, for the creative ones amongst us, maybe the basis and a part ingredient of a light lunch. So, what is it? You’ve got it from the headline. Eggs Mexicana.
Eggs Mexicana
It sounds quite a flash-ish, latino name doesn’t it. No worries, it is simple and yes, it does have a touch of the latino in it though. Let’s have a look at this simple Eggs Mexicana extravaganza.
Eggs Mexicana – Process
1/ Put two tablespoonfuls of butter in a saucepan.
2/ Add four tablespoonfuls of finely chopped onion and shake until the onion is soft, but not brown.
3/ Then add four Spanish peppers cut in strips, a dash of red pepper and a half pint of tomatoes; the tomatoes should be in rather solid pieces. NB: To really put hairs on your chest – consider jalapeno peppers!!!
4/ Add a seasoning of pepper and salt.
5/ Let this cook slowly (for about 6 minutes).
There’s your sauce.
6/ Add and fold the desired quantity of eggs. Cook and fold (scramble for about 4 minutes). NB: Depending on the amount of servings, add the number of eggs accordingly.
7/ When the eggs are ready to serve, put two tablespoonfuls of the sauce at each side of the dish, and serve.
Simples isn’t it!!! Add a couple of slices of toast and you have a real tasty breakfast or brunch. What kind of toast? A bit of granary I reckon.
The Big Question?
I know what you are thinking. In keeping with my other posts of spectacular creations, should you add a twist or not?
As you know, my preferred “lob a twist” or “twist with a lob” is to add something spicy. Looking at these ingredients, I reckon you wouldn’t need a twist. Again though, all down to personal preference.
If there was a spicy twist to add though, I would include a bit extra as per below and make a lunch out of it. What would I add? That’s simple. A lot of people nowadays do like a bit of Chorizo. So do I. Add a bit of Chorizo and a salad with coleslaw and bingo, a tasty lunch.
As an alternative to Chorizo though consider Kabanos (spicy Polish sausage). Chorizo or Kabanos would add additional “Wow Factor” to an already “Wow” simple stay at home recipe.
