Eggs A La Reine-Stay At Home Recipes

Time for a simple but tasty, stay at home recipe. Simple and tasty. You can’t beat it can you. And filling, oh and plenty of. Nothing worse than having a bite to eat only to find you’re still hungry after it is there. To be fair this is more of a ‘nibble’ type dish. Not a full meal. A good ‘un for a mid to late morning brunch. Let’s have a go at “Eggs a la Reine” then hey.

Eggs Benedict!!! Who wants egg benedict when you can have Eggs A La Reine? Here’s your new, ‘different’ breakfast/brunch nibble. I read somewhere that it is a good detox nibble as well. Go figure!!!

Anyway, without further ado, “Eggs A La Reine”

Eggs A La Reine

Ingredients

6 eggs (or however many you wish depending on how many you wish to serve. Note however, the rest of the ingredients is suitable for 6 servings)
1/2 pint of chopped cold cooked chicken
1/2 can of mushrooms
2 tablespoonfuls of butter
2 tablespoonfuls of flour
1/2 pint of milk
1/2 teaspoonful of salt
1 saltspoonful of pepper

Instructions

Firstly, preheat oven to 350 degrees.

Use ordinary shirring (baking) dishes for the eggs.

First off butter the dishes, break eggs (without breaking the yolk) into a separate bowl (one at a time). Place an egg into each of the baking dishes.

Rub the butter and flour together, add the milk, stir until boiling, add the salt, pepper, chopped chicken and mushrooms, and put one tablespoonful of this on top of each egg and you’re good to go.

This is also works a treat if you put a tablespoonful of the mixture in the bottom of the dish. You can then break the egg into it, and then when you’re ready to serve, put another tablespoonful over the top.

Pop into the oven for a cooking time of about 15 minutes. Say, between 15 to 17 minutes. Have a look at the 15 minutes mark though.

Preparation time is about 5 minutes. So easy, peasy – in about 20 to 22 minutes you have a tasty brunch-like nibble to get down you.

It is a simple dish that can be varied and expanded on. I know what you’re thinking. The burning question, to add a twist or not?

Eggs A La Reine – To Add A Twist Or Not?

If you have read my other posts I do like to add a twist now and then. What sort of twist? Have a look at my other recipes HERE to see more about twists.

In this particular case, would I twist? As in all situations, twisting with a lob, or lobbing a twist is entirely down to individual choice. Mind you, as pepper is already in the dish, I wouldn’t add any extra spicy twist.

However, a bit of grated cheese sprinkled on top or on the base before baking would be a good addition in my book.

What I could see though as a tasty addition is a nice spicy Kabanos, or Chorizo to have with it. Sounds like a plan!!
