Time for another gourmet extravaganza to be added to the stay at home recipes category. Nothing spectacularly difficult. Just nice and simple. Like me. And just as you would like on a leisurely Sunday afternoon…..during lockdown. Right here we go. This latest stay at home recipe is as easy peasy as it comes. And the good thing, it is ideal for a classic ‘lob it in twist’ if you wish. The world is your lobster as they say. The classic easy recipe for today is easy chilli.

I told you it would be simple didn’t I. Not even I could screw this one up.

Anyway, easy chilli. Here go’s

Easy Chilli

Easy Chilli Ingredients

1 can Kidney beans (or baked beans).

1/2 lb Minced beef, or minced lamb, or turkey if you prefer. Any vegetarians reading can replace any of those meats with Quorn.

1 can Tomato soup. Or a can of chopped tomatoes.

1 tablespoon Chilli powder

1 small Onion, chopped

*NB* You can of course increase the quantities accordingly depending on either how hungry you are the number of servings -e.g. 1lb of mince instead of 1/2lb.

Easy Chilli Instructions

Firstly I would brown off the mince. Then, dump all into a pot. Bring to the boil. Turn down and simmer about 30 minutes, stirring it all regularly.

A great cooking technical word that isn’t it. Dump. I wonder if they had a whole lecture dedicated to how to dump on catering courses.

“In our next catering class folks we will show you to dump”

You could imagine it couldn’t it.

But did they have special classes for ‘lob it in for a twist’ or ‘lob it in with a twist’

Maybe I should look to trademark ‘lob it in’ for when I bring out my stay at home recipes cook book.

Easy Chilli – To Twist Or Not?

I know, I know, you’re probably thinking. Do I add a twist to this recipe? Of course it’s entirely up to you because the recipe is a standard enough easy chilli recipe as it is.

Personally, would I add a twist and lob it in? Yes, I would. I would add some chopped up red and green chillies. I would also add some garlic and black pepper. In addition I would spice it up a bit more and add some chopped up spicy sausage.

Either chorizo, or for me, as I was brought up on Polish food, I would choose Kabanos.

What about a touch of red wine added? Or a drop of beer or cider? You decide.

Finally, top it off with some grated cheese? That’s easy enough to try with and without isn’t it. First bowl with, second bowl without, or vice versa.

Mind you, I would have a bowl of tortilla chips with it, or a bowl of kettle crisps. And of course, a cold can or two from the fridge!!! Go on, you’ve deserved it.
